Farro Mix

Organic farro mixed with butternut squash, zucchini, red onion, and rosemary.

I love this time of year and all the seasonal foods that come with it! There are TONS of fresh vegetables and grains that are great this time of year. Butternut squash is definitely one of my favorites! If you are unfamiliar with this winter squash, it basically is an orange, starchy vegetable kind of like a potato and is high in antioxidants. It also adds great flavor and color to any dish! Farro is one of my favorite seasonal whole grains and is a great addition to salads and soups. It takes a while to cook raw, so that is why I used Trader Joe's 10 Minute Farro to expedite the cooking process. I personally like farro mixed in with different veggies and herbs to make a great side dish. I think this recipe works out so well because all the items are in season and as the saying goes "if it grows together, it goes together!" Below is the recipe for for my farro mix. It's a pretty simple recipe and pairs well with wild salmon or your choice of meat! Hope you enjoy and have fun cooking :)

Farro Mix recipe (serves 2)


1 cup of vegetable broth (You can use water if you'd like. I just like to add vegetable broth for extra flavor)

1/4 cup of water

1/2 cup of Trader Joe's 10 Minute Farro

1/2 cup of diced zucchini

1/2 cup of diced butternut squash

1/2 cup of diced red onion

1 tablespoon of chopped rosemary

Salt & Pepper


1. Combine farro, vegetable broth and water in a medium sized pot. Bring to a boil and then lower the heat, cover the pot and let it cook for around 10-15 minutes.

2. While the farro is simmering, begin dicing the butternut squash, red onion and zucchini. Chop up the rosemary as well.

3. When done, sauté all the vegetables in a pan with a little bit of extra virgin olive oil. Sauté veggies until they are a nice golden brown. Add rosemary and salt & pepper for seasoning.

4. Once the farro is done (all the liquid is gone and the the farro is nice and fluffy) add all the ingredients together in the pot. Mix them together and your fall farro mix is ready to serve!
