Seasonal Veggie Tacos

Corn tortillas with melted cheese topped with grilled zucchini, butternut squash, red onion, corn and cilantro.



Tacos are not only for Tuesdays!

I love a good taco! Especially ones that have a good crunch and juicy flavor to them. Butternut squash is definitely one of my favorite winter squashes. It's super delicious and provides a lot of health benefits. It’s high in antioxidants, keeps prevent high blood pressure and boosts your immune functions. Zucchini, corn and onion provide different textures making this taco a smash! Also topping it with cilantro gives it a nice fresh flavor. Something I wish I had done was make the tortilla from scratch because I think that would have made it even better, but regardless these were bomb and super fun to make! Hope you enjoy :)


Seasonal veggie tacos (serves 6)


Ingredients

1 cup diced butternut squash

1 cup frozen or fresh corn

1 cup half sliced zucchini

1/2 cup diced red onion

1 tbsp of extra virgin olive oil

2 grated garlic cloves

Sea Salt

Cajun Seasoning

Cilantro

Sriracha (optional)

Corn tortillas

Four cheese blend


Directions

1. Cut up your butternut squash (diced), red onion (diced) and zucchini (half slice). Combine chopped items in a bowl. Add in corn, grate in the garlic and add in the seasonings.

2. Add in the oil and mix up everything. Sauté all the vegetables in a pan until they are a nice golden brown.

3. Once veggies are done begin heating up the corn tortillas in a skillet. After the tortilla is taken out the pan immediately add the cheese so that it will melt on.

4. Once the cheese has melted add veggies to your tortilla and top it off with some cilantro leaves. Also add some sriracha for an extra kick! Enjoy :)
